The Fulton by Jean-Georges

This project represents a collaborative effort between chef Jean-Georges and Yabu Pushelberg, who envisioned a space that honors the historic site of Pier 17 South Seaport. The design infuses elements that narrate the seaport's origins as a fish market and shipbuilding hub, revitalizing the area into a modern seafood restaurant and food market that celebrates local ingredients. Natural materials, subtle nautical accents, and a customized underwater sea mural create a rich tapestry that pays homage to the past while inviting guests to enjoy an elevated contemporary dining experience.

The first seafood restaurant by Jean-Georges

A romantic underwater seascape on hand-painted undulating panels, industrial metallic mesh dividers, wood panelled detailing, and whimsically knotted pedants all transform this space into a backdrop complimenting the artistic plates of locally sourced seafood.

Enwrapping the guests in a dreamlike experience, this space tells a story through every designed and curated detail, from the ceilings to mimic a boat hull to the ceramic tiles inspired by the lapped wood pier from the past.

Enticing guests to the upper levels to watch the mastery in preparing local ingredients at the oyster bar, infusing entertainment into this gastronomic experience that invokes all five senses.

It tells a story of locally sourced ingredients, intricately prepared and creatively plated for an elevated food experience.

Designed to highlight the unique positioning of this restaurant, with views of the Brooklyn Bridge. Each seat in the restaurant provides a different experience of the space: from a private dining room tucked away in the back to front row seats at the bar downstairs or the oyster bar upstairs, to cozy booth seating and open booths under glistening pendant lights in the center of the dining area, guests are invited to explore new perspectives each time they dine.

Each view informs a sense of place in this historic part of New York.
